Soulfood needed - Garden-Cook-Event: Cranberries

it's still pouring outside. seems like the weather wants to show us a perfect interpretation of the song 'november rain' although it's still october - and it's doing quite a good job. the best time to come up with a bit of healthy soulfood. looking through my cookbooks i stumbled upon a recipe for "Grießmakronen" made with dried fruits in one of those booklets you get at the supermarket for free. remembering astrid's cranberry event, i decided to give this recipe a try and define dried cranberries as "dried fruits". as there are no "Makronen" left any more, it can be said, that this was a rather good decision. the recipe is really easy, and is swiftly made.




Grießmakronen (making about 30 macroons):
75 dried cranberries
100 ml water
1 vanilla sugar
1 egg - white and yolk seperated
50 g butter
50 g brown sugar
150 ml milk
100 g semolina
150 g wheat flour
1 ts baking powder

1.) soak the dried fruits in the water for about 30 to 45 minutes. then chop them into small pieces.
2.) whisk the egg white stiff.
3.) mix butter, sugar, vanilla sugar and the egg yolk untill smooth.
4.) bring the milk to boil, add the semolina and stir the it until it becomes a thick chunk.
5.) add the chunk instantly to the butter-sugar-yolk mix and stir well.
6.) mix the wheat flour and the baking powder in.
7.) fold stiff egg whites into the mixture.
8.) add the chopped cranberries.
9.) spoon small teaspoons of the mixture on a greaseproof paper.
10.) bake at 160 °C for about 25 minutes.
11.) let them cool down and enjoy.

edit: i did the recipe once more, because it was too good and learned 2 things:
) skip step 2 and 7. just mix well the butter, sugar, vanilla sugar and the whole egg.
) AND VERY IMPORTANT: don't bother with teaspoons at step 9 - use a tablespoon. otherwise the macroons become so small, that you feel guilty because of eating that many of them ;).
